Can you assign a task to yourself?

No. A task is always addressed to somebody else: the send dialog offers your students and your classes, and there is no entry for yourself. An account with no students cannot send a task at all.

A teacher can still try their own task. On the task page there is a play control that runs it exactly as a student would see it — every stage, every exercise, in order. It is a rehearsal, not an assignment: nothing is saved, no result appears anywhere, and closing the page loses the run. The same is true of a task opened through a share link.

So if you are working on your own, the tool for it is not a task but the set: open the set, choose View exercises, and practise as often as you like. You lose nothing by it, because a task you assigned to yourself would not be counted anywhere either.
